Tracy's Jamaican Easter Bun

A rich, spiced loaf glazed to perfection, studded with fruits and cherries — a timeless taste of Jamaican tradition.

INGREDIENTS

  • 2 eggs (whisked)

  • 5 tbsp butter

  • 1 bottle Dragon Stout

  • 1 cup wine (from soaked fruits)

  • 1 cup brown sugar (2 cups)

  • 1 tbsp molasses

  • 2 tbsp jam

  • 2 tbsp orange zest

  • 2 tsp vanilla

  • 4 cups sifted flour

  • 1 ¼ tsp salt

  • 4 tsp baking powder

  • ½ tsp baking soda

  • 2 tsp mixed spice or 5 spice

  • 3 tsp nutmeg

  • 2 tsp cinnamon

  • 1 cup cherries

  • 1 cup-soaked raisins

  • 1 tsp browning (for colour, add as desired)

METHOD

Liquid Mixture

  1. On medium-high heat, melt butter and add Dragon Stout.

  2. Add wine.

  3. Add 1–2 cups of sugar.

  4. Add molasses and jam.

  5. Stir, then add vanilla.

  6. Add orange zest to eggs and blend.

  7. Add egg mixture to liquid when cooled.

Dry Mixture

  1. In flour, add salt, baking powder, baking soda, and      spices.

  2. Add cherries and raisins; incorporate and coat well.

  3. Add liquid mixture a little at a time and mix properly.

Baking

  1. Add to a buttered baking pan.

  2. Fill pan halfway with batter (leave space for the bun      to rise).

  3. Decorate with cherries.

  4. Bake in a preheated oven at 160°C for 1 hour      15 minutes.

GLAZE (Just before removing bun from oven)

  • 2 tbsp jam

  • 1 tbsp butter

  • 3 tbsp sugar

Instructions:

  • Melt glaze ingredients.

  • Spread on top immediately after removing bun from oven.

Notes:

  • Let bun cool before slicing.

  • Best enjoyed fresh or slightly warmed.
